Cheese Chowder
Cheese Chowder is an impressive dinner. Made with 2/3 c. chopped onion, 2 cloves garlic, minced, 1 c. chopped celery, 1 c. chopped carrots and 1 c. cubed potatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine first 6 ingredients in a large pot over medium-high heat.
Bring to a boil, reduce heat, cover and simmer 15 to 20 minutes or until potatoes are tender.
Stir in corn and remove from heat.
Melt butter in heavy saucepan.
Stir in flour and cook 1 minute.
Gradually add milk and cook, stirring constantly, until mixture thickens.
Blend in remaining ingredients.
When cheese melts, add to vegetable mixture, stirring until well blended. Heat through, but do not allow to boil.
