Cheese and Bacon Potatoes
Cheese And Bacon Potatoes is an easy dinner. Made with 6 slices bacon, 4 large potatoes, thinly sliced with skins on, 1 (4 oz.) can chopped green chilies, 1 large onion, chopped fine and 1 1/2 c. (16 oz.) shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place bacon in cold skillet.
If using electric skillet, turn temperature to 325Β°.
Fry until crisp.
Remove and drain.
Remove grease from skillet, leaving 2 tablespoons in skillet.
Add potatoes to skillet, cover and cook 10 minutes.
Turn potatoes and cook 10 more minutes or until tender.
Crumble bacon and combine with green chilies and onion.
Sprinkle over potatoes.
Top with cheese.
Cover and cook 5 minutes.
