Cheddar Cheese Soup
Cheddar Cheese Soup is an moderately easy dinner. Made with 1/2 c. chopped onion, 2 tbsp. margarine, 3 tbsp. dijon mustard, 1/8 tsp. white pepper and dash of nutmeg, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a large saucepan, saute onion in margarine until soft. Stir in flour, mustard, pepper and nutmeg.
Gradually add broth, cook, stirring constantly, until smooth.
Add milk, heat through. Remove from heat.
Add cheese, stir until melted.
Serve immediately. Garnish with chopped parsley, if desired.
Serves 4, approximately 3/4 cup each.
