Charlie'S Famous Chicken And Rice is an moderately easy dinner. Made with 4 to 5 boneless, skinless chicken thighs, 1 large bell pepper, finely chopped, 5 celery stalks, finely chopped, 1 large (very large) or 2 medium onions, finely chopped and 2 family size bags yellow rice with seasoning, this recipe delivers authentic, satisfying flavors. Bring chicken, bell pepper, celery and onion to a boil.
Boil for approximately 15 minutes or until done.
Pour contents through colander, reserving all of the stock.
Cut cooked chicken into quarters.
Return chicken and vegetables to pot.
Following rice instructions, use stock in place of water, adding an additional 1/4 cup of stock and cook as directed.
When done, add pimientos, if desired.
Best when served with either red or black beans (preferably red beans); recipe follows.
