Cauliflower Onion Soup
Cauliflower Onion Soup is an moderately easy dinner. Made with 1 c. chopped onion, 2 tbsp. butter, 2 tbsp. flour, 2 1/2 c. chicken broth and 2 c. cauliflower, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large saucepan, saute onion in butter until soft.
Stir in flour; cook over low heat, stirring, for 3 minutes.
Remove pan from heat; add chicken broth, stirring, and add cauliflower and bring to boil.
Simmer for 30 minutes.
PurΓ©e in blender in 2 batches and return to saucepan.
Add milk, cream, cayenne pepper, white pepper and salt to taste.
Cook until hot and serve sprinkled with minced parsley.
Serves four.
