Cauliflower Casserole
Cauliflower Casserole is an moderately easy dinner. Made with 2 carrots, shredded, 1/4 c. butter or margarine, divided, 1 can cream of mushroom soup, 1 large cauliflower, broken into flowerets and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute carrots and onion in 2 tablespoons butter in a large saucepan until tender.
Stir in 1 cup stuffing mix, soup and sour cream.
Remove from heat.
Cook cauliflower in boiling water 10 minutes or just until tender.
Add to soup mixture.
Pour into an 8-inch square baking dish, which has been coated with cooking spray.
Combine remaining 2 tablespoons butter and 1/2 cup stuffing mix; sprinkle on top of casserole.
Bake at 350Β° for 25 minutes.
Serves 6 to 8.
