Carrot Salad
Carrot Salad is an moderately easy dinner. Made with 4 c. shredded carrots, 2 tbsp. sugar, 1 tsp. salt, 2 c. diced celery and 1 c. raisins, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place carrot mixture in colander or large strainer.
Add celery and raisins.
Mix together and let stand 30 minutes.
Sti rin mayonnaise and mix well.
Let stand in strainer over sink 15 to 20 minutes so extra mayonnaise can drain.
Serve in scoops on leaves of lettuce.
Refrigerate to store.
Makes 6 to 8 servings.
