Carrot Salad
Carrot Salad is an moderately easy dinner. Made with 1 small cucumber, unpeeled and sliced thin, 1 c. diced celery, 1 medium onion, sliced thin, 1/2 chopped green pepper and 3 c. cooked carrots, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

This is a "make ahead" dish.
Mix all ingredients except cucumbers and refrigerate at least 24 hours.
While mix is setting, soak cucumbers in salt water.
Drain cucumbers and add to carrot mixture just before serving.
