Carrot-Nut Cake
Carrot-Nut Cake is an impressive dessert you can prepare in about 1 hour 2 minutes. Made with c. salad oil (scant), c. granulated sugar (i use 1 3/4 c.), c. all-purpose flour, . baking powder (i use 1/2 tsp.) and . baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Beat oil and sugar with mixer for 5 minutes.
Sift flour, baking powder, baking soda, salt and cinnamon together; stir half of this mixture into oil and sugar mixture.
Blend thoroughly, then add remaining dry ingredients alternately with eggs (one at a time), mixing well after each addition.
Add carrots and nuts. Pour into lightly oiled 9 or 10-inch tube pan.
Bake at 325Β° for 1 hour.
