Carrot Muffins
Carrot Muffins is an moderately easy dinner. Made with 1 c. flour, 1/4 c. brown sugar, 2 tsp. baking powder, 2 beaten eggs and 1 c. finely shredded carrots, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In mixing bowl, stir together flour, brown sugar, baking powder and 1/2 teaspoon salt.
Make a well in center.
Combine eggs, carrots, cooking oil and lemon juice.
Add all at once to dry ingredients.
Stir until moistened.
(Batter should be lumpy.) Fill greased or paper baking cup-lined muffin cups 3/4 full. Bake at 375Β° about 25 minutes.
Makes 8 muffins.
