Carrot Casserole is an easy dinner. Made with 2 lb. carrots, pared and sliced, 1/3 c. brown sugar, 1/4 lb. (1 stick) butter or margarine, 1/4 lb. velveeta cheese and 12 ritz crackers, crushed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil and drain carrots, put in a 1-quart baking dish. Sprinkle with brown sugar.
Melt margarine and Velveeta together and pour over carrots.
Top with cracker crumbs and bake 1/2 hour at 350Β°.
