Carrot Cake
Carrot Cake is an impressive dinner. Made with 2 c. sifted flour, 2 tsp. baking powder, 1 1/2 tsp. baking soda, 1 1/2 tsp. cinnamon and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 350Β°.
Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt.
Add sugar, salad oil and eggs; beat well.
Add carrots, pineapple, nuts and coconut; blend thoroughly.
Pour into 3 (9-inch) round layer cake pans that have been greased and floured.
Bake in moderate oven 35 to 40 minutes. Turn out on wire racks and cool thoroughly.
Fill layers and frost top and sides of cake with cream cheese frosting.
