Carrot Bran Muffins
Carrot Bran Muffins is an impressive dinner. Made with 2 to 3 c. shredded carrots, 1 c. unprocessed bran, 1/2 c. honey, 3/4 c. skim milk and 2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 400Β°.
Grease 12 muffin cups.
In large bowl, combine carrots, bran, honey, milk, oil, lemon juice, egg, dates or raisins and nuts, if desired.
Let mixture stand for 5 minutes. In a medium bowl mix together flour, sugar, baking soda, pumpkin pie spice and salt.
Combine dry ingredients into wet ingredients and stir just until moistened.
Bake for 15 to 20 minutes.
