California Casserole is an moderately easy dinner. Made with 1/4 c. oil, 1 lb. lean ground beef, 2/3 c. chopped onion, 1/3 c. chopped green pepper and 1/2 c. rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat in oil in skillet.
Spoon into 2-quart casserole (leave drippings in skillet).
In drippings, cook onion and green pepper until limp and brown.
Leave drippings and spoon vegetables over meat in casserole.
In skillet, cook and stir rice until light brown.
Stir rice, seasonings and olives into meat and vegetables.
Blend water and tomato paste; pour over meat mixture. Bake, covered, at 350Β° for 1 hour.
Serves 4 to 5.
