Calico Bean Soup
Calico Bean Soup is an moderately easy dinner. Made with 2 c. (16 oz.) assorted dry beans, 8 c. water, 1 1/4 lb. ham hocks, 1 (28 oz.) can whole tomatoes, undrained and cut up and 1 c. chopped onion, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Soak beans for 12 hours.
Drain beans; add 8 cups water and ham hocks.
Bring to a boil.
Reduce heat; cover and simmer 3 hours.
Add tomatoes, onions, carrots, chili powder, salt, pepper and lemon.
Bring to a boil.
Reduce heat; simmer 30 minutes. Remove bones from soup; cut meat from bones.
Return meat to soup. Remove and discard lemon slice.
Makes 10 (1 1/4 cup) servings.
