Cajun Pork Chops
Cajun Pork Chops is an moderately easy dinner. Made with 6 (1-inch) center-cut pork chops, 2 c. cooked rice, 1 large tomato, sliced, 1 large bell pepper, cut into 1-inch rings and 1 can cream of chicken or chicken soup, this recipe delivers authentic, satisfying flavors. In large skillet, brown the seasoned pork chops.
Place in large baking dish so that each chop will be on bottom.
Place 1 pepper ring on each pork chop.
Place large spoon of rice in bell pepper ring.
Pat until firm.
Put generous tablespoon of soup (undiluted) on rice.
Place a slice of onion and a slice of tomato on top.
Pour mashed tomatoes over chops and cover with foil. Bake 1 hour at 375Β°.
Serves 6.
