Cajun Creole
Cajun Creole is an moderately easy dinner. Made with 6 ears fresh tender corn, 4 tbsp. vegetable oil, 2 large ripe tomatoes, peeled and chopped, 1 medium white onion, sliced in thin circles and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. Cut corn lengthwise through less than half of corn kernel.
Cut second time to remove of grain (don't cut deeply into the corn cob).
In a heavy skillet, combine oil, corn, tomatoes and seasonings.
Cook over low heat for 20 minutes, stirring to keep from sticking.
Cover and let stand for a few minutes before serving.
Serves 6 to 8.
