Cabbage and Sausage Casserole
Cabbage And Sausage Casserole is an easy dinner. Made with 1 ring or 2 lb. smoked sausage, 4 c. shredded, fresh cabbage, 1 large can sauerkraut (reserve about a cupful), 1 medium onion and 3 slices bacon, cut into 2-inch pieces, this recipe delivers authentic, satisfying flavors. Cook the sausage in a pan of water for about 10 minutes. Remove the sausage.
Use the same water to cook the cabbage in, adding about 2 more cups of water.
Boil the cabbage, onion and bacon pieces for about 20 minutes.
Drain thoroughly the can of sauerkraut.
Squeeze the sauerkraut of its liquid and add to the cabbage mixture.
Mix well and boil for another 15 minutes.
Stir often as to prevent scorching or burning.
