Butterscotch Cream Pie
Butterscotch Cream Pie is an moderately easy dinner. Made with 1/2 c. granulated sugar, 1/3 c. hot water, 2 c. milk, 1/4 c. butter or margarine and 6 tbsp. all-purpose flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place granulated sugar in small, heavy saucepan.
Cook over low heat without stirring until sugar melts and becomes golden brown.
Remove from heat.
Add water slowly.
Cook without stirring until sugar dissolves.
Add milk.
Heat to almost boiling.
Melt butter in top of double boiler.
Remove from heat. Add flour, brown sugar and salt.
Beat in eggs and milk mixture. Cook over boiling water, stirring constantly until thickened. Cover and cook for 10 minutes, stirring occasionally.
Cool to room temperature.
Pour into baked shell.
Chill for several hours.
Top with whipped cream.
