Buttermilk Pralines
Buttermilk Pralines is an moderately easy dinner. Made with 3 c. sugar, 1 c. buttermilk, 1/2 c. light corn syrup, 1 tsp. baking soda and 3 c. pecan pieces, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine first 4 ingredients in a large dutch oven; Cook over low heat, stirring constantly until sugar is dissolved.
Cover and cook over medium heat 3-4 minutes to wash down sugar crystals from sides of pan.
Uncover and bring to a boil.
Cook to soft ball stage, stirring constantly.
Stir in pecans, butter and vanilla. Remove from heat.
Continue stirring until mixture begins to thicken.
Working rapidly, drop by tablespoonfuls onto wax paper. Let stand until firm.
Yield: 2 dozen.
