Buttermilk Pralines
Buttermilk Pralines is an moderately easy dinner. Made with 3 c. sugar, 1 c. buttermilk, 1 tsp. baking soda, 1/2 c. light corn syrup and 3 c. coarsely chopped pecans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine sugar, buttermilk, baking soda and corn syrup in a large saucepan and bring to a boil.
Boil to soft boil stage (234° to 238°).
Just before removing from heat, add butter and vanilla. Remove from heat and stir in pecans.
Beat until mixture loses its gloss and holds its shape.
Drop in mounds on wax paper and let cool.
Makes approximately 5 dozen.
