Buttermilk Coconut Pies
Buttermilk Coconut Pies is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 3/4 stick margarine, 2 tbsp. vanilla and 1 (8 oz.) bag frozen coconut, shredded, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Separate egg yolks and freeze egg whites for later use.
Beat egg yolks.
Add sugar.
Mix well.
Add melted margarine and stir. Add coconut.
Mix well.
Add buttermilk.
Mix well and pour into pie shells.
Preheat oven to 325° to 350°.
Cook slowly for 30 to 45 minutes on baking rack on lower level of oven.
Makes 2 pies. Allow to brown evenly on top.
