Brunch Eggs
Brunch Eggs is an moderately easy dinner. Made with 4 slices bacon, fried crispy, 1/4 c. oleo, 1/2 lb. chopped beef or ham, 1 or 2 (4 oz.) cans sliced mushrooms, drained and pepper to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix together first 5 ingredients.
Crumble bacon and finely chop beef.
Sprinkle on flour and add milk.
Heat and stir until thickened.
Scramble eggs into 1/2 cup oleo.
Use a large deep dish casserole or pan, approximately 9 x 13-inch.
Layer sauce and egg, ending with sauce (usually 4 layers).
Cover, a must.
Bake at 275Β° for 1 hour.
Can prepare day ahead covered and refrigerated.
Serves 8 to 12.
