Breast Of Chicken With Orange Sauce is an moderately easy dinner. Made with 1/2 c. finely chopped onion, 1/2 c. grated carrot, 1 tbsp. grated orange rind, 2 whole chicken breasts, split and skin removed and 1 c. orange juice, this recipe delivers authentic, satisfying flavors. Place onion, carrot and orange rind in bottom of shallow baking pan.
Arrange chicken breasts on top.
Mix 1/2 cup orange juice and wine.
Pour over chicken.
Cover and bake in 350Β° oven for 45 minutes or until tender.
Remove chicken and keep warm.
In same pan chicken cooked in, combine stock, remaining orange juice, ginger, cornstarch and juices in pan.
Heat until sauce thickens, stirring often.
Pour over chicken.
Garnish.
