Brazil Nut Cake
Brazil Nut Cake is an moderately easy dinner. Made with 3/4 c. sifted plain flour, 1/2 tsp. baking powder, 1/2 tsp. salt, 3 c. shelled brazil nuts and 2 pkg. pitted dates, about 1 lb. cut up, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Start heating oven to 300Β°.
Grease, then line with waxed paper a 9 x 5 x 3-inch loaf pan.
In sifter, put flour, sugar, baking powder and salt.
In large bowl, place cut up nuts, dates and cherries.
Sift flour mixture and spread evenly in pan.
Bake 1 3/4 hours or until cake tester inserted in center comes out clean. Cool.
Wrap in aluminum foil and refrigerate.
Keeps 5 to 6 weeks.
