Blushing Onion Soup
Blushing Onion Soup is an moderately easy dinner. Made with 4 c. thinly sliced onions, 1 clove garlic, finely chopped, 1/4 c. margarine or butter, 1 (46 oz.) can tomato juice and 1 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large kettle or Dutch oven, cook onions and garlic in margarine until tender.
Stir in tomato juice, water, bouillon and parsley.
Bring to a boil; reduce heat.
Simmer, uncovered, 20 to 30 minutes, stirring occasionally.
Ladle into 8 ovenproof soup bowls.
Top with bread slices and sprinkle generously with cheese. Broil 2 to 3 minutes or until cheese melts.
Serve immediately. Makes 8 servings.
