Blueberry Pudding
Blueberry Pudding is an impressive dinner. Made with 2 c. blueberries, juice of 1/2 lemon, 1/2 tsp. cinnamon, 3/4 c. sugar and 3 tbsp. butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Line well-greased 8-inch pan, about 2-inches deep, with blueberries, lemon juice and cinnamon.
Cream butter and 3/4 cup sugar; add milk.
Sift dry ingredients and add to mixture.
Spread batter over blueberries.
Mix 1 cup sugar, dash of salt and cornstarch; sprinkle over batter.
Pour boiling water over top. Do not stir.
Bake at 375Β° for 1 hour.
Serve hot with whipped cream or vanilla ice cream.
Serves 6.
(Can be doubled and baked in 9 x 13-inch pan.)
