Blender Gazpacho
Blender Gazpacho is an moderately easy dinner. Made with 1/4 c. pared, seeded cucumbers, 3/4 c. skinned seeded tomatoes, 1/4 c. condensed consomme or water, 1/2 tsp. chopped red pimiento and 1 tsp. to 1 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Blend together 2 to 3 minutes cucumbers, tomatoes, consomme or water and pimiento.
Add and blend for a shorter time the olive oil.
Add, but do not blend, as the flavor would be too strong the chopped chives.
Season to taste.
Serve by pouring the broth over 2 ice cubes.
Makes about 1 cup.
