Black-Eyed Peas
Black-Eyed Peas is an moderately easy dinner. Made with 1 lb. dried black-eyed peas, soaked overnight, 4 c. water, 1 chicken bouillon cube, 2 small onions, quartered and 1/2 tsp. thyme, crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Soak black-eyed peas overnight.
(Instead you may bring to boil and let stand for 1 hour.)
Combine peas, water, bouillon, onion, garlic, thyme, vegetable oil and salt in Dutch oven or large saucepan.
Bring to a boil.
Reduce heat, cover and simmer gently for 1 hour or until tender.
Add additional water if peas become too thick.
