Black-Eyed Pea Salad
Black-Eyed Pea Salad is an moderately easy dinner. Made with 2 (16 oz.) cans black-eyed peas, rinsed and drained, 1 c. chopped celery, 1 chopped green bell pepper, 1 large tomato, peeled and chopped and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Combine peas, celery, pepper, tomato, garlic, 2 onions, mushrooms, pimento and salad dressing.
Cover and chill at least 8 hours, stirring once in awhile.
Drain and spoon into lettuce lined bowl.
