Black Beans And Rice is an moderately easy dinner. Made with 1 (14 1/2 oz.) can chicken broth (not condensed), 1/2 c. coconut, 1 tbsp. margarine or butter, 1 c. uncooked long grain rice and 1 (15 oz.) can black beans, rinsed and drained, this recipe delivers authentic, satisfying flavors. In a medium saucepan, combine broth, coconut and margarine. Bring to a boil.
Stir in rice.
Reduce heat.
Cover and simmer 15 minutes. Stir in beans and onions.
