Black Bean Soup
Black Bean Soup is an impressive dinner. Made with 12 oz. black turtle beans, 6 to 8 c. chicken broth, 2 tbsp. butter, 1 c. chopped onion and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Soak beans for 20 hours; drain.
Add chicken broth and heat to boiling.
Simmer 3 to 4 hours.
Melt butter in skillet and saute onion, celery and carrots 3 to 5 minutes.
Add to beans along with potatoes, bay leaf, oregano and black pepper; simmer for another 45 minutes.
Stir in lemon juice.
Serve and garnish with lemon slices.
