Black Bean Soup is an moderately easy dinner. Made with 3 c. dry black beans, 1 whole onion, 2 stalks celery, 2 cloves garlic and 1 large can tomato sauce or 16 oz. very veggie juice or tomato juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Soak beans 8 hours or overnight.
Cook beans until tender in a large pot of water.
Saute in olive oil, chopped celery, garlic and onion.
Add to cooked beans.
