Black Bean Pasta
Black Bean Pasta is an moderately easy dinner. Made with 12 oz. uncooked bowtie pasta, 6 to 8 garlic cloves, diced, 1/4 c. olive oil, 2/3 c. fresh key lime juice and 1/2 c. sherry, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook pasta according to package directions, drain and keep warm.
Saute garlic in oil in skillet until tender.
Add lime juice and sherry, cook over high heat 5 minutes or until mixture is reduced to 1/4 cup.
Add green onions and chopped tomato. Cook over medium heat, stirring occasionally, for 5 minutes.
Stir in black beans and next 3 ingredients.
Pour over pasta, toss to coat.
Sprinkle with parsley, serve immediately.
