Bizcochitos
Bizcochitos is an moderately easy dinner. Made with 1 lb. lard, 2 c. sugar (or less), 4 eggs, 2 tsp. rum or vanilla extract and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Beat lard and sugar until smooth.
Add eggs, one at a time, beating well after each addition.
Beat until smooth and creamy. Mix in rum, salt, baking soda, baking powder, and anise flavoring. Add flour, a little at a time, and mix until well blended.
Using a melon ball scoop, place spoonfuls of dough on an ungreased baking sheet about 2 inches apart.
Bake at 400Β° for about 12 minutes.
