Benedictine Spread
Benedictine Spread is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 4 tbsp. cucumber juice, grated onion to taste, 1 to 2 tbsp. mayonnaise and dash of tabasco, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large bowl, using an electric mixer, beat cheese until smooth and creamy.
Slice cucumber in half lengthwise.
Scrape pulp and seeds into a small sieve.
Place sieve over a cup and, with the back of a spoon, push juice from pulp (if more juice is needed, rub peeled cucumber over sieve to extract juice).
Add cucumber juice, onion, mayonnaise, Tabasco, Worcestershire and only enough green coloring to give a faint green tint.
Beat until thoroughly blended.
Correct seasoning, if necessary.
Refrigerate.
