Beefy Jalapeño Cornbread
Beefy Jalapeño Cornbread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 1 c. milk, 2 eggs, beaten, 3/4 tsp. salt and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine cornmeal, milk, eggs, salt, soda, bacon drippings and corn in a mixing bowl.
Blend well and set aside.
Saute ground beef until lightly browned, drain thoroughly and set aside.
Pour half of cornmeal batter into a greased 13 x 9 x 2-inch pan. Sprinkle with cheese, crumble beef over cheese and sprinkle with onions and peppers.
Pour remaining cornmeal batter over top. Bake at 350° for 50 minutes.
