Beef Vegetable Soup
Beef Vegetable Soup is an moderately easy dinner. Made with 1 lb. ground beef, 1 lb. frozen mixed vegetables, 2 medium potatoes, peeled and diced, 1 1/2 tsp. salt and 1 small can tomatoes, chopped, this recipe delivers authentic, satisfying flavors. In a large saucepan, brown beef.
Stir often to keep broken apart; drain off excess fat.
Add 1 quart of water, potatoes and salt to meat; cook until potatoes are tender but not done.
Add all remaining ingredients; simmer for about 20 minutes.
May need to add more water if it is not soupy enough.
Can add 1 cup of egg noodles if you like noodle soup.
Cook them with potatoes and meat.
