Heat large heavy pot.
Add meat.
Brown on all sides without oil.
Pour off any fat.
Sprinkle onion around meat.
Cover tightly.
Cook over low heat for 1 hour.
Remove from heat.

When cool, slice across grain for serving.
Return meat to pot.
Sprinkle with salt and pepper.
