Bean-Rice Casserole
Bean-Rice Casserole is an moderately easy dinner. Made with 1 1/2 c. brown rice, 3 c. pure apple juice, 1/2 c. chives, chopped, 1 red bell pepper, chopped and 3/4 c. garbanzos, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Place rice, apple juice, chives and bell pepper in slow cooker and cook for 3 hours.
Meanwhile, steam garbanzos (which have soaked overnight in water) for 1 hour.
Add peas, carrots and corn to steamer and continue steaming for another 10 to 15 minutes.
Remove vegetables along with garbanzos to rice in slow cooker.
Serve when ready.
