Barley Casserole
Barley Casserole is an moderately easy dinner. Made with 1 c. barley (not quick cooking), 6 tbsp. butter, 1 c. green onion, 1/2 c. fresh parsley and 3 1/3 c. chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and barley in butter until golden.
Take off heat. Stir in parsley, salt and pepper.
Spoon into an ungreased casserole dish.
Before ready to cook, heat broth and stir in to blend.
Cook for 1 hour and 10 minutes in 350Β° oven.
