Barbecue Duckling
Barbecue Duckling is an easy dinner. Made with 1 (5 to 6 lb.) duckling, 2 c. barbecue sauce and 1/3 c. water, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Thoroughly defrost duckling.
Remove giblets, neck and excess fat.
Quarter the duckling.
Place in salt water for at least 2 to 4 hours.
Preheat oven to 350°.
Thoroughly rinse pieces and place on broiler pan which has been coated with cooking spray.
Place in oven for 1/2 hour, turning once.
Drain fat.
Reduce temperature to 325° for 1 hour, turning every 15 minutes.
Place barbecue sauce and water in 8-quart pot.
Mix thoroughly.
Add duckling.
Cover. Cook over very low heat for 2 hours and 15 minutes.
Delicious over hot rice or pasta.
