Banana Salad
Banana Salad is an moderately easy dinner. Made with 1 egg, 1/2 c. sugar, 2 tbsp. margarine, crushed peanuts and 3 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Slice bananas in halves lengthwise and lay cut side down on a paper towel.
Spread peanut butter on 1/2 of cut bananas, then put the 2 halves back together.
Next, slice the filled bananas in 1-inch chunks, the short way.
Put in bowl and set aside.
In saucepan, beat eggs with fork.
Add sugar and vinegar and stir. Place over medium heat and stir constantly until mixture thickens. Remove from heat; add margarine and set pan in cool water.
Stir until cool.
Pour over bananas.
If desired, sprinkle crushed peanuts over top of salad.
Can refrigerate until ready to serve.
