Banana Nut Bread
Banana Nut Bread is an moderately easy dinner. Made with 2 large eggs, lightly beaten, 1 c. mashed ripe bananas, 1/2 c. margarine, melted, 1 tsp. vanilla and 1 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 4 ingredients in a large bowl.
Stir well. Combine flour, soda and sugar.
Add to banana mixture, stirring until well blended.
Stir in pecans, coconut and raisins.
Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan. Bake at 325Β° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan for 10 minutes. Cover with foil the last 15 minutes of baking to prevent overbrowning, if necessary.
