Banana Bread
Banana Bread is an moderately easy dinner. Made with 1 1/4 c. flour, 1/4 c. wheat germ, 1/4 c. oatmeal, 2 1/4 tsp. baking powder and 1/3 c. shortening, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350°.
Grease a loaf pan lightly with some shortening.
Cream shortening and sugar.
Add beaten eggs, mashed bananas and lemon juice until well blended.
Mix all dry ingredients together.
Add to shortening/banana mixture.
Mix until well blended.
Add nuts and lemon zest if desired.
Pour into greased loaf pan.
Bake 350° for 45 minutes.
Cool 5 minutes. Remove from pan.
