Banana Bombay Salad
Banana Bombay Salad is an moderately easy dinner. Made with 2 lb. cooked chicken or turkey breast, 1/2 c. raisins, 3 green apples, 1/2 c. chopped walnuts and 5 bananas, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Purée 3 bananas and whisk with lemon juice, mayonnaise, yogurt and tarragon.
Refrigerate at least 2 hours.
Cut chicken or turkey into bite-size pieces.
Add cut green apples and raisins. Add walnuts and mix.
Cut remaining 2 bananas into thick chunks and add the banana purée blend to recipe.
Mix together.
Serve chilled.
