Baked Ziti with Vegetables
Baked Ziti With Vegetables is an impressive dinner. Made with 2 tbsp. olive oil, 1 medium green and red bell pepper, diced, 1/4 lb. mushrooms, chopped, 1 (16 oz.) can tomatoes and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute peppers in oil for 5 minutes.
Remove and set aside. Saute onions, garlic and mushrooms for several minutes.
Break up tomatoes and add to skillet; add tomato sauce, wine, basil, salt, pepper and oregano.
Bring to boil.
Simmer 20 minutes.
Add spinach and corn; cook until spinach wilts.
Combine ziti, tomato mixture, Ricotta and 2/3 of peppers and spoon into prepared casserole.
Sprinkle with Parmesan.
Bake at 375Β° for 25 minutes. Garnish with remaining peppers.
