Baked Squash from the Black-Eyed Pea
Baked Squash From The Black-Eyed Pea is an moderately easy dinner. Made with 5 lb. medium style yellow squash, 2 eggs, 1 c. bread crumbs, 4 oz. butter and 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut off tips of squash. Cut squash into 3 or 4 pieces.
Place in pot and add water to just cover squash. Cook until tender. Drain in colander.
Mash and add other ingredients.
Pour mixture into ovenproof dish and cover with a light layer of bread crumbs. Bake at 350Β° until lightly browned.
