Baked Rice Custard
Baked Rice Custard is an moderately easy dinner. Made with 2 cups milk, 3 eggs, 3/4 cup sugar, 1/2 tsp. salt and 1 cup cooked rice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Scald milk in the top of a double boiler.
Slightly beat eggs and combine with sugar and salt in a 1 1/2 quart casserole. Gradually stir in scalded milk, add cooked rice, raisins and vanilla. Sprinkle with nutmeg and place in oven.
Bake at 325 until set, about 50-60 minutes.
Makes 6-1/2 cup servings.
