Baked Potato Soup
Baked Potato Soup is an moderately easy dinner. Made with 2 tbsp. butter or margarine, 2 tbsp. flour, 1 c. water, 5 medium potatoes, baked, peeled and cubed and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Saute 1 small onion in butter or margarine until tender.
Add flour and stir until smooth.
Add one cup of water with bouillon cube and milk.
Stir constantly, until thickened.
Add potatoes. Cook and stir until potatoes are well mixed in white sauce.
Salt and pepper to taste.
Add 1/2 to 1 teaspoon basil to taste.
Serve hot with bacon, Cheddar cheese and chopped green onion.
Yields 4 servings.
